Doburoku
orara no doburoku
Please enjoy our sake (orara, meaning "ours") brewed with clear water, koji, and rice, handmade by people you know.
"orara" means "ours" in the local dialect of Tsuchiyu (Romanized name, not in glossary). It is a symbol of the warm connections where local people gather to talk and support each other over sake. "orara no doburoku" is "our sake" brewed by hand with local rice, water, koji, and people, embodying this sentiment in its name.
- Dry and clean with nothing added *NAKED* 15% ABV
- Gentle sweet and sour flavor derived from our own brewery's koji *original* 6% ABV
- Sweet flavor where the complex taste of ancient rice is harmoniously balanced *Shirowase Amakuchi* 12% ABV
At the small brewery located in a corner of Tsuchiyu Onsen (hot spring) Town, the rich taste of carefully prepared doburoku brings smiles to customers' faces today.
ORARA Co., Ltd. orara no sakaba Junjogura Brewery
Locally sourced doburoku (unrefined sake) born in Tsuchiyu Onsen (hot spring), Fukushima Prefecture.
At "orara no sakaba Junjogura Brewery", all brewing processes, from washing the rice to fermentation, are carried out by hand. We use sake rice cultivated by ourselves not only for steamed rice but also for koji rice. With this dedication, we carefully brew our sake in a small brewery, valuing the region's rice, water, and connection with people. A gentle aroma spreads along with the carbonated bubbles that softly rise. At the shop, you can taste nama-doburoku (unpasteurized doburoku) exactly as it is freshly made 🍶🫧.
Furthermore, a new brand, Shirowase Amakuchi (Sweet Shirowase), was jointly developed with Fukushima University using the ancient rice Shirowase, which was once cultivated in this region 🌾. It is a special beverage characterized by natural effervescence and a rich aroma 🌟.
"We want to nurture a sake that can only be made on this land, while valuing the local blessings and human connections," says the brewer, Mr. Yutaka Ota (Romanized name, not in glossary). The challenge, which began with the desire to once again attract people to a town that had lost its vitality after the earthquake, continues quietly and strongly in this hot spring region today.
