PUKU PUKU Brewing makes sake in Odaka, Minamisoma City by fermenting rice from the Hamadori area until it bubbles and transforms into sake. The company was founded in 2022 under the mission "Increasing farmland on the coast of Fukushima through sake." We traveled around the country brewing in various locations as a phantom brewery. In the autumn of 2024, we were able to launch our own brewery and Kakuchi Bar (standing bar for sampling sake). Based on the concept of "Japanese Sake that dissolves the boundary between different cultures," we brew doburoku (unrefined sake) and craft sake. A characteristic of our brewing technique is that all fermentation is done naturally (without added yeast), similar to the methods used before the Edo period. We also blend craft beer techniques and brew in wooden barrels. Please enjoy our unique flavors.
PUKU PUKU Brewing in Minamisoma, Fukushima is a new style of sake brewery that combines traditional Japanese Sake brewing methods with the ideas of craft beer and wine.
It is entirely additive-free (no added yeast or lactic acid). All brewing involves the natural fermentation of rice produced in the Hamadori area.
The standard product, "Puku Puku Hop SuSuSu", is a sweet and sour, refreshing hop sake characterized by an aroma similar to muscat grapes. It is a product where you can also feel a juicy, fruity flavor.
In 2024, the company fully renovated a traditional house in Odaka, Minamisoma City, that had been vacant for 13 years, and opened its own sake brewery.
The Kakuchi Bar (standing bar for sampling sake) is also open on Thursday, Friday, and Saturday from 6:00 PM to 10:00 PM. You can enjoy freshly brewed sake right at the brewery 🍶✨.
