Since 2011, the year of their 300th anniversary, Niida Honke has operated under a profound mission: to become 'a sake brewery that protects Japan's rice fields.' This is not just a slogan; it's a practice. Every drop of their sake is brewed from natural rice, grown without any pesticides or chemical fertilizers. Today, their dedication runs even deeper. They have fully embraced the 100% kimoto method, cherishing the beautifully unadulterated, rich flavors that can only be born from two things: pure, natural rice and pure, natural water.

At the very heart of Niida Honke's philosophy lies a single, powerful belief: 'Sake must be a beverage that is good for one's health.' This guiding principle shapes everything they do. They protect the mountain environment to safeguard their precious brewing water. They cultivate natural rice to create truly delicious sake. They have embraced sustainable, cyclical agriculture, and are even researching new fertilizers, blending rice straw, husks, and bran with the nutrient-rich sake lees from their own brewery.

This natural rice is not easy to grow. It is labor-intensive and the yields are small. But the reward is a flavor that is incredibly pure and profoundly deep. In the world of sake competitions, polishing ratios of 35% or 40% are the norm for top daiginjo. Yet, their 'Odayaka Junmai Daiginjo,' a sake that won the top Governor's Award at the Fukushima Sake Appraisal, is polished to only 50%. "Through our trials, we discovered that this natural rice simply has very few parts that are unnecessary for brewing," explains Yasuhiko Niida, the 18th generation head and toji. This is the magic of natural rice: the sake it creates is not just filled with deliciousness and peace of mind, it is a direct link to a more ecological way of life.

"By brewing 'Shizenshu,' I want to transform this place, Tamura Town, from just a 'remaining' rural village into a 'truly authentic rural area'—a place with the most vibrant rice fields in all of Japan," Mr. Niida says. He finishes with a smile and one final, powerful thought: "When everyone drinks our sake, another rice field of natural rice is born."

Now, that's a reason to drink sake.
