Sake brewing committed to the "Three Principles of Local Sake"
Suehiro Sake Brewery was founded in 1850. It operates from two locations, driven by a simple yet profound dedication to "crafting truly delicious sake": the Kaeigura (in Aizuwakamatsu City), which strongly retains the vestiges of antiquity and continues to brew by hand, and the modern Hakasegura (in Aizumisato Town), equipped with state-of-the-art facilities.
Their motto is brewing sake that adheres to the "Three Principles of Local Sake." "Sake crafted from local rice, local water, and by the Aizu Toji (master brewers) and Kurabito (brewery workers). This, I believe, is the genuine local sake of Aizu," states Toji Koumei Tsusa. The rice is sourced through contracts with approximately fifty farmers in the Aizu region.
The brewing water for Kaeigura comes from a water vein originating in Mt. Seaburiyama, a medium-hard water. The Hakasegura uses fine, soft underground water flowing from a virgin beech forest. And then, there is the human element: the brewing process led by the master craftsmanship of the Aizu Toji and the skilled Kurabito. Their exceptional skill is proven by the numerous gold awards won at The Annual Japan Sake Awards.
Furthermore, Kaeigura was once ranked number one in Japan by the Nikkei Shimbun in a feature titled "Sake Breweries Fun to Visit," highlighting its aspect as a tourist destination. A visit to the brewery is, without question, highly recommended.
