A Gentle Evening Sake to Soothe the Soul
Yuri Hayashi(Senior Managing Director / First-Grade Sake Brewing Technician)
After graduating from the Tokyo University of Agriculture's Department of Fermentation Science in 1996, she joined her family's brewery, Tsurunoe Sake Brewery. That same year, she began studying at the Fukushima Prefecture Sake Academy Vocational Skills Development School and worked with her mother, a sake brewing technician, to launch the popular brand "Yuri." In October 2021, she and her husband, Hirotoshi Mukai, who became the Representative Director, now protect the brewery together.
Into the World of Brewing, Beyond the Textbooks
Yuri Hayashi was born the eldest daughter at Tsurunoe Sake Brewery, which dates back to 1794. In 1996, she graduated from the same program as her father, the Department of Fermentation Science at the Tokyo University of Agriculture, and joined the family brewery.
"I joined the family business because I wanted to try what I learned at university in a practical way," she says. "I had also seen firsthand how difficult the work of a small brewery owner was, so I wanted to help my family."
At the time, her father, the 7th generation owner, was in charge of sales and other external business, while her mother, a certified sake brewing technician, handled the important work inside the brewery.
Yuri: The Hit New Product Created with Her Mother
In the winter of her first year, Yuri, who was studying at the "Sake Academy," was entrusted with developing a new product. The concept, proposed by a department store in Tokyo, was "sake for women, by women."
She designed the sake quality with her mother, deciding on a Junmai Daiginjo with a floral and fragrant character, using Fukushima's sake rice and yeast. She also incorporated sub-zero bottle aging, which was rare at the time.
The resulting sake, "Yuri," was floral, crisp, clean, and dry, capturing the hearts not only of women but of many Japanese sake fans.

CHANGE_What was your biggest turning point?
In 2007, when my husband (Hirotoshi Mukai) and I decided to take over the family business and returned home. My husband was my classmate in the Department of Fermentation Science at the Tokyo University of Agriculture and was originally a kurabito (brewery worker) at Tsurunoe.
PERSON_Who gives you energy?
Our veteran Toji, Masanori Sakashita, who was awarded the Medal with Yellow Ribbon in 2019. His smile is wonderful. Just having him nearby gives me a sense of security and makes me feel energized.
FUTURE_What is your vision for the future?
I want to be smiling, surrounded by the sake of Tsurunoe Sake Brewery. To make that happen, I'll do my best to grow alongside everyone at the brewery, protect it, and stay healthy!
