Pursuing free brewing that transcends genre boundaries
The main alcoholic beverages from haccoba are brewed by adding hops, the key ingredient in beer, during the sake brewing process. While this method may seem new at first glance, it is based on the "Hanamoto" brewing technique for Doburoku that is traditionally practiced in some parts of the Tohoku region. Taking this as a starting point, we are challenging ourselves to create a diverse range of flavors by incorporating the free brewing style of modern craft beer. We re-edit Japanese sake using the free culture of craft beer, which is also connected to the traditional Doburoku making of the past, to deliver an unprecedented experience.
haccoba Odaka Brewery / Namie Brewery
Based on the concept of "more freedom in brewing," haccoba -Craft Sake Brewery- began brewing a new genre of sake called "Craft Sake," and this year marks its fifth anniversary.
In addition to the brewery created by renovating a private house in Odaka, Minamisoma City, a new brewery and shop were also opened last year in the unmanned station building of JR Joban Line Odaka Station 🌟.
The brewing method at haccoba is based on traditional Japanese sake production, where indigenous plants from Fukushima Prefecture and hops are fermented together with rice.
The new standard product, "zairai," is popular for its gentle, seasonal herbal notes, combined with the umami flavor of rice 🌾🌿✨.
Furthermore, we recommend the product for the current season, the "Ginger PON☆PON," which features an attractive pink label. Ginger soda lees (lees of ginger, etc.) are fermented together with rice. The refreshing, fizzy texture resulting from in-bottle secondary fermentation is also perfect for this hot season 🤍.
