Sake Brewing Focused on a Clean, Sweet Flavor
Aizunisiki is unique for its "Namari" (dialect) series, a product line featuring seven types of sake, including "Sasukene" and "Koderanni." This line was conceived by the former president as a local sake (jizake) to be cherished by the community. Incidentally, these names are from the Aizu dialect: "Sasukene" translates to "It's all right," and "Koderanni" means "unbearably good."
Originally, this local sake was sold only within its hometown of Takasato-machi. However, its reputation has gradually spread to Kitakata City and even beyond Fukushima Prefecture. "The people of our hometown, Takasato, spread the word for us," says Takanori Saito, the fourth-generation head of the brewery, expressing his gratitude to the local community.
The brewery's commitment lies in using the abundant soft water that springs from underground and brewing all its sake from table rice. However, "Creating a clean, smooth, and sweet sake requires extremely difficult management of the moromi (fermentation mash)."
Saito, who also serves as the toji (master brewer), achieved the desired crisp sweetness through a yondan shikomi (four-stage fermentation) process. The sake is renowned for its clean finish and a lingering sweetness in the aftertaste that leaves one craving more.
