Cold winters and hot summers. In Aizubange Town, located near the heart of the Aizu basin, Akebono Shuzo has been brewing sake for over a century since its founding in 1904. In 2010, the brewery stood at a new starting line, led by the young generation poised to carry it forward. "We want to continue making sake that endlessly wells up with joy, both in the brewing and the drinking." So speaks the sixth-generation head, Koichi Suzuki.
To improve sake quality, they are exacting about their facilities, focusing on thorough temperature and storage management. They embrace a spirit of challenge, driven by the goal of giving their absolute maximum each year, striving with all their might to surpass what they achieved the year before.
Currently, their lineup features "ISSYO SEISYUN" and the Junmai-centric "TENMEI," alongside liqueurs such as the yogurt-based "Snowdrop" and plum sake (Umeshu).
"TENMEI" is an ideal food-pairing sake (shokuchu-shu), distinguished by its modest aroma and fine balance of umami, sweetness, and acidity. "ISSYO SEISYUN," in stark contrast, is brewed as a sake of completely different character: "a sake we want you to drink from a glass," defined by its floral, clean, and light nature. Furthermore, after the Great East Japan Earthquake, driven by a desire for local recovery and to "expand the circle of sake," they collaborated with Aizu Chuo Dairy to develop "Snowdrop," a liqueur blending sake and yogurt. Today, it stands as one of their three pillars, a product popular even among those unaccustomed to Japanese sake. It is a brewery that grows daily, one whose future is truly exciting to watch.

Akebono Shuzo is a long-established brewery founded in 1904. Their flagship brand, "TENMEI," was created with the sentiment "like the morning sun shining into the darkness." It is designed to accompany a wide variety of cuisines, making it a perfect sake to enjoy with meals. Seasonally limited products expressing Japan's four seasons are also released monthly, allowing you to enjoy them alongside seasonal dishes.

In 2017, as a symbol of recovery for the four prefectures affected by the Great East Japan Earthquake and the Kumamoto Earthquake (Iwate, Miyagi, Fukushima, and Kumamoto), the brewery released "Kiyu," a Junmai Daiginjo made from a blend of rice grown in all four prefectures. In 2018, aiming to improve the brewery's sake-making technology, "Kimai" was newly created by blending rice from all 47 prefectures of Japan, unifying the sentiments of the entire nation. "Kimai" won a Gold Prize at the 2023 Fukushima Prefecture Autumn Sake Appraisal and also received the Tasters' Special Award at the Tohoku Sake Appraisal in the same year.
