Troubled by an era where sake was becoming a mass-produced, industrial product, this brewery dedicated itself to a different path: "sparing no effort to create the genuine article." This philosophy is absolute. They commit to a rice polishing ratio of 60% or less and a long, slow fermentation at low temperatures. They employ traditional methods, using wooden tools, a Japanese cauldron (wagama), and the painstaking futa-koji and toko-koji techniques.
To protect the integrity of the sake and prevent degradation, its quality is preserved through in-bottle aging. By continuously brewing and shipping throughout the year, they deliver a product that is always vibrant and defined by a crisp, fresh finish. The brewery is located in Nihonmatsu City, where the dramatic temperature shifts provide the ideal environment for cultivating high-quality sake rice. The resulting ginjo sake, meticulously crafted by the hands of artisans, is renowned for its rich, expansive aroma and a flavor that is both well-defined and unmistakably solid.
The brewery is also passionately working to expand the world of sake enthusiasts. The addition of Sparkling Sake to their lineup is one testament to this effort. President Yusa himself travels overseas, personally planning and hosting dynamic events, pouring his energy into attracting new legions of female and international fans to the art of sake.
