Pursuing the possibilities of Japanese sake with environmental conservation as a guiding principle.

This historic brewery, founded in 1865, undertook a profound transformation in 1974. It was a time when pollution and environmental concerns were becoming a major social issue in Japan. With a new vision, they gave birth to 'Shizengo,' a junmai sake crafted from environmentally friendly rice. Even today, they hold fast to that original policy, pouring all their energy into unlocking the true potential of Japanese sake.

The brewery's chairman, fourth-generation head Daikichi Ohki, made a firm resolution: "We will use rice that is full of life, and offer the world a pure sake, free from all impurities." It was a radical idea for the time, but he commissioned local farmers to grow rice without pesticides. From this, the junmai sake 'Shizengo' was perfected. It quickly became famous as 'a sake overflowing with the umami of rice.'

In recent years, the brewery has also become renowned for something else: its cooking sake. It began as a sweet, rich junmai sake that just didn't turn out as expected. But in a flash of inspiration, they tried it not for drinking, but for cooking—and discovered it produced an exquisite flavor. This 'authentic cooking sake' soon captured the attention of food manufacturers committed to safe, natural ingredients, and its reputation spread like wildfire.

Their challenge continues. From yogurt sake to plum wine, they are dedicated to crafting products using environmentally friendly ingredients, all while holding true to a philosophy that relies on natural quality, not additives.
