Fujinoi Daiginjo

Every Encounter is Unique, Every Sake has a Story.

Just a short 1.5km journey north of JR Koriyama Station stands a special place: Sato Sake Brewery, the closest brewery to the bustling station.

This brewery is steeped in history, founded way back in 1710 and boasting a legacy over 310 years long. Situated along the historic Ou Kaido highway, it holds a charming legend. It is said that Niwa Ko, the lord of the Nihonmatsu domain, was passing by when he saw the beautiful wisteria (fuji) flowers blooming on the grounds. He was so moved that he named the brewery's signature sake "Fujinoi," or 'Wisteria Well.'

For centuries, they followed tradition. Then, in 2017, they embraced a new beginning. The brewery underwent a major renovation, updating its historic storehouse and installing new equipment, readying itself to craft premium daiginjo and junmai daiginjo sake. To guide this new chapter, they welcomed a master brewer from the renowned Nanbu Toji guild. Together, they are now forging a new vision for the "Fujinoi" brand, brewing ginjo sake with 100% Yamada Nishiki rice.

But even with this focus on premium sake, their heart remains with the people. As Representative Director Shuko Sato says, "We want to continue brewing sake, including our everyday table sake, that can be enjoyed casually and will always be loved by our local community."
