Cup Sake Project “Brewing of the Original Cup Sake Begins!”

Here is a follow-up report on the original “Fukushima sake” cup sake development project 📰✨ Brewing for the cup sake took place at Akebono Shuzo.

The highlight of this project is that many sake breweries are cooperating to brew the sake. On this day, brewers gathered from all over the prefecture! Everyone took turns carrying the steamed sake rice to the brewing tanks, and for the brewing water, water brought from each participating brewery was all mixed together! We spoke with Koichi Suzuki, Representative Director of Akebono Shuzo, where the brewing took place.

Representative Koichi Suzuki:

“Brewing together with so many breweries, I feel like we’re finally getting started. Having 44 breweries cooperate to brew sake is unprecedented, everyone’s collective energy behind this project. I’m sure we’ll be able to make great sake. I’d be happy if this cup sake becomes an opportunity for people who don’t usually drink sake to give it a try.”

And the very next day, brewing for a different flavor of sake took place at Sasamasamune Shuzo. For this cup sake, you can enjoy two types of flavors created by combining Fukushima Prefecture’s original sake rice “Yumenokaori” and “Fukunoka” with Fukushima Prefecture’s original sake yeast “Utsukushima Yume yeast” and “Utsukushima Kirameki yeast”!

We will continue to share project updates here on the Fukushima Sake Instagram. Please stay tuned for future info!

“Great rice, great water, great people. Fukushima sake🍶”
